JOB SUMMARY

The pastry commis is responsible for the preparation of pastry ingredients, he/she also helps the pastry chef to accomplish the plate in a standard way.

JOB SKILLS

• Follows daily menu plans assisting the Chef de Partie with preparation of food to the highest possible standard and maintaining Health & Safety standards.
• Able to work to recipes and standards laid out by the Pastry Chef
• Has a complete understanding and ability to execute the following in a proficient manner:
• Aware of food handling critical standards, as follows: proper food temperatures, cooling of hot foods including leftovers, sources, food contamination, personal hygiene, and sanitizing
• Proper “mise en place” and knife skills
• Knowledge of different coulis & all sorts of chocolate, fruits and flours
• Good product knowledge of pastry variety, quality and seasonality

EDUCATION & EXPERIENCE

• A minimum of two years experience in pastry is required
• High school degree is the minimum requirement.
• Fluent in written and spoken English. French is a plus

CHARACTARISTICS & COMMUNICATION SKILLS

• Must be willing to work a variety of day/night and weekend shifts.
• Must be able to read, write and speak English.
• Good knowledge of pastry
• Enthusiastic & Passionate
• Has a positive and hard working attitude
• Requires strong organizational skills.
• Must be able to work independently.
• Able to be on his/her feet for long periods of time.
• Outstanding friendly personality with definite ‘can do’ attitude,
• Excellent attention to details
• Must meet grooming standards.

• Polite and courteous to customers and supervisors
