Position Summary
The Junior Cost Controller supports the cost control function by assisting in the monitoring, analysis, and optimization of operational costs for the Lebanon market. The role ensures accuracy in cost reporting, supports the control of inventory, and helps maintain data integrity across the POS system. This position collaborates closely with the Cost Controller and restaurant operations to ensure cost efficiency, compliance, and timely reporting.

Duties & Responsibilities
1) Cost Control & Analysis
• Assist in monitoring daily and weekly cost reports across all departments.
• Support the Cost Controller in analyzing food and beverage cost variances and preparing recommendations.
• Ensure recipes and yields are properly entered, costed, and updated in the system.
• Support the implementation of cost optimization initiatives while maintaining product quality.
2) Purchasing & Supplier Coordination
• Coordinate with suppliers and the purchasing team to ensure accurate pricing and delivery documentation.
• Verify that all purchase orders and invoices are properly matched, with any variances explained and documented.
• Follow up with suppliers and internal teams to resolve cost-related discrepancies.
3) Inventory Tracking & Variance Checks
• Assist in maintaining accurate inventory records and system alignment with physical counts.
• Participate in monthly stock counts and prepare variance analysis reports.
• Support the Cost Controller in identifying potential losses, wastage, or discrepancies.
4) POS Item & Recipe Management
• Create and update new menu items in the POS system, ensuring correct pricing, recipe linking, and category assignment.
• Manage screen layouts, item sequencing, and other operational updates as requested by the Cost Controller.
• Ensure all recipe changes are reflected accurately between the POS, cost sheets, and inventory management systems.
5) Reporting & Documentation
• Prepare and maintain cost-related reports, including daily flash reports, stock variance reports, and price lists.
• Ensure documentation accuracy and completeness in both digital and physical records.
• Support the Cost Controller in providing data for management reviews and audits.
6) Process Improvement & Compliance
• Follow internal policies and cost control procedures as outlined by Swiss Butter’s Supply Chain and Finance departments.
• Suggest improvements to cost control workflows to increase efficiency and data accuracy.
• Support compliance with internal control standards and audit requirements.
7) Internal Coordination
• Coordinate daily with restaurant teams, purchasing, and accounting to ensure smooth flow of cost data.
• Escalate issues and findings to the Cost Controller in a timely manner.
Key Performance Indicators (KPIs)
• Inventory Accuracy: Variance between physical and system stock within ±3%.
• POS Data Accuracy: 100% of new items and recipe updates reflected correctly.
• Timely Reporting: All weekly cost reports and variance analyses submitted within defined deadlines.
• Cost Efficiency: Support delivery of targeted food cost % within ±2% of budget.
• Compliance: 100% adherence to cost control and documentation policies.
Qualifications & Experience
• Bachelor’s degree in finance, Accounting, Business, or Hospitality Management.
• 1–2 years of experience in cost control, accounting, or F&B operations.
• Familiarity with restaurant POS systems (e.g., Lightspeed, Micros, Toast, or similar).
• Basic knowledge of inventory management and cost reporting.
• Experience in food and beverage industry preferred.
