Job Description: Cold Section / Pass Chef

Job Summary
We are seeking a talented and detail-oriented Cold Section / Pass Chef to join our acclaimed culinary team. The ideal candidate will be a master of the Garde Manger station and will also command the pass, ensuring every dish that leaves our kitchen meets the highest standards of quality, presentation, and accuracy. This dual role is critical to our kitchen’s success, bridging the artistry of our cold dishes with the final, flawless execution of our entire menu.
Key Responsibilities
Cold Section (Garde Manger)
• Prepare and execute all cold appetizers, salads, charcuterie, and desserts with precision and consistency, adhering to our signature recipes and presentation standards.
• Take ownership of the Garde Manger station, including managing inventory, ordering supplies, and minimizing waste.
• Develop and contribute to new menu items for the cold section, bringing creativity and a deep understanding of flavor profiles.
• Maintain an impeccably clean and organized station, strictly following all food safety and sanitation guidelines.
The Pass
• Act as the final quality control checkpoint for every dish, ensuring it is perfectly cooked, plated, and garnished before it reaches the guest.
• Orchestrate the flow of orders from the kitchen to the dining room, ensuring timely and accurate service.
• Serve as the primary communication link between the kitchen and front-of-house staff, coordinating with precision and professionalism.
• Add the final garnishes and touches to each plate, ensuring a stunning visual presentation.
Requirements
• Minimum of 3-5 years of experience as a Garde Manger or in a similar role, with a significant portion of that time spent in a fine-dining or Michelin-starred environment.
• A culinary school diploma or equivalent professional training is highly preferred.
• An expert understanding of food safety, sanitation, and HACCP standards.
• Exceptional organizational skills and the ability to multitask effectively in a high-pressure, fast-paced setting.
• Impeccable attention to detail and a relentless pursuit of culinary perfection.
• Strong communication and leadership skills, with the ability to work collaboratively with a diverse team.
